Ingredients

250 g of Lucanian chickpeas

1 small onion, chopped 🧅

2 medium carrots, diced 🥕

2 celery stalks, chopped 🌱

2 tablespoons of Lucanian extra virgin olive oil 🍈

1 liter of water or vegetable broth 💧

1 bay leaf 🌿

Salt and pepper to taste 🧂
Preparation
1️⃣ Rinse the chickpeas and leave them to soak for 8-10 hours in cold water.
2️⃣ In a large saucepan, sauté the onion, carrots, and celery with Lucanian EVO oil for 3-4 minutes.
3️⃣ Add the drained chickpeas, water or broth, and bay leaf. Bring to a boil.
4️⃣ Reduce the heat and simmer for about 30 minutes (20 minutes in a pressure cooker), until the chickpeas are tender.
5️⃣ Season with salt and pepper and serve hot, with a drizzle of Lucanian extra virgin olive oil.

For a creamy consistency, blend half of the chickpeas before serving.
